Tropical Island coconut cake


Its been awhile since my last post, getting back into the swing of things after the holidays has been a bit of a struggle. We are starting the renovations to our home this week including the kitchen. I am not sure what to expect as I have never done anything like this before. I am assuming that my kitchen will have limited use for the next few months. Perhaps a few more raw recipes :P


Edward and Sons sent me another box of goodies to try out, including a bag of organic coconut flour. I have never worked with it before, so I was sort of unsure of how to use it. When I opened the bag I got lost in the sweet smell of coconut. The flour has a course powdery texture. It is also gluten free but because my family and I are not sensitive to gluten I cut it with all purpose flour.  They also sent me organic coconut flakes, which are crazy good! I toasted them a little for the topping and "glued" them on with this coconut spread I picked up in Quebec. Spread some blueberry jam in the middle  and made a quick blueberry sauce and put it all together to get this....



Coconut Cake Recipe

2 cups flour
3/4 cup Coconut flour
1 cup sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1/3 cup canola oil
1 tsp vanilla
1 1/4 cup soy milk

Combine all the ingredients in a bowl. Mix well.
Pour into a greased pan ( I used a round 8)
Bake at 350 for 45 minutes or until the knife comes out clean.

Spinning

 
Its been a bit of a whirl wind around my place the last little while, had family come and stay with us for a few days, friends for lunch and dinner, thanksgiving, birthdays and more. Needless to say I have been cooking a lot.Everything from tofurkey to birthday cake!

It's been fun but I get tired now & then and need a little rest. I am typing with the wood stove burning, drinking a cup of hot chai, as the little one sleeps on the couch next to me. I think about how time passes so quickly....how life passes so fast. It takes time to write recipes and go through tons of pictures, sometimes too much :P

It was the little ones birthday yesterday. The BIG 2! Pretty quiet celebration just the 4 of us and her best buddy and her mom. It was nice and chill. I made a big pot of carrot soup, a broccoli quiche, homemade chai tea and a birthday cake.

I try to make the cakes I grew up with, my mom always made my brother and I great ones (thanks mom). 
I am thankful for family and friends they make my life full and wonderful, and if it wasn't for them I would have no reason to cook!

Lavender Orange Tea Cake

I picked up some cooking lavender at the Halifax Farmers Market a few weekends back. It was my plan to make some sort of shortbread cookie with it, but I decided to make a tea cake with it instead.

I figured it would be best to use applesauce since it doesn't have a strong flavor, and orange zest to play off the lavender. I was a little worried that it might taste like perfume, but it only has a slight hint of flowers. I also added a sucanat sugar crumble to the top. I think I would infuse the milk with a bit more lavender next time, but this turned out moist and light perfect to go with a hot cup of tea.

  • 1 cup non-dairy milk
  • 1 tbsp dried cooking lavender

Heat the milk and lavender up, and steep for at least 10 minutes

  • 2 cups flour
  • 3/4 cup organic cane sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp clove powder
  • 1/4 tsp cardamom powder
  • 1/4 tsp sea salt
  • 1/2 cup applesauce
  • 1/3 cup veggie oil
  • 1 tsp white vinegar
  • 1 orange zested and juiced
  • 2 tsp dried lavender

Topping

  • 1/4 cup organic sucanat sugar
  • 1/4 cup flour
  • 2 tbsp earth balance

In a large mixing bowl combine dry ingredients.
In a small mixing bowl combine wet ingredients, including infused milk
Pour wet into dry and stir until combined.
In a greased loaf pan pour mixture in.
In a small bowl combine topping ingredients and mix up with fingers until resmebles course crumbs
Spread the topping mixture over the batter and bake in a 350 oven for 40-50 minutes or until done.

Gingerbread Cake


This afternoon, it took me about 15 minutes to make this mouthwatering dessert.  My mom and dad arrived this morning, Yippee! We went puddle jumping with the tot on a walk to get the mail. I turned off the heat in the house these last few days from all the warm weather we had, but it got cold again :( So what better way to warm the house (and my feet), but with a hot oven and a gingerbread cake :) Served with apple sauce.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 & 1/2 tablespoon ginger, ground
  • 1/2 tsp.cloves, ground
  • 1/2 teaspoon cinnamon, ground
  • 1/2 cup vegetable oil
  • 1 cup organic cane sugar
  •  1/2 cup molasses
  • 1 cup soy milk
  • 1 tablespoon vinegar
  • 1 tbsp organic powdered sugar
Preheat oven to 350
Grease a bunt pan.( or whatever pan you got, this would be good loaf style too)
In a large bowl combine dry ingredients.
In a medium bowl combine wet.
Pour wet into dry
Mix until blended.
Pour into greased pan and bake for 30-35 minutes. until knife comes out clean.
Let cool and sprinkle powdered sugar on top.

For the last few days I have been brainstorming what I am going to do for dinner on Valentines day. Today was the day to make the dessert, so this is it.
I call it " WYLMF" will you love me forever.



Chocolate Ganache Birthday Cake


It was my birthday yesterday, and since I am really the only person in the home that knows how to bake (somewhat), I decided that I would make myself a cake. Its hard to go to a bakery and request a vegan cake:P
So I checked out the best chocolate cake recipes, and found this one. It was really easy and inexpensive, because it used cocoa powder instead of chocolate. The results...I would make it again

Cake Ingredients

1 1/4 cups flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp distilled white or apple cider vinegar

Preheat the oven to 350 degrees.
Mix in a bowl dry ingredients, combine wet into dry and mix well.
Pour into a greased cake pan, and bake for 23-30 minutes.
or until a knife comes out clean.
