Weekend vegan breakfast




I can never have too many fresh veggies in my fridge! I had no idea what I was going to make when I stepped into my kitchen this morning.  I opened the fridge and started from there. Mushrooms(check), red pepper(check), onion (check), potatoes (check), tomatoes (check), avocado (check), a very small piece of tofu that we had used yesterday (check).

Yes there are a few steps in this recipe but it was fun! First I grated up 3 medium sized potatoes, placed  in a bowl of water. Once everything was chopped and ready to go I drained the potato of the water. Grated 1 onion, chopped 1 tbsp fresh parsley, 2 green onions sliced ,1 tbsp flour,1 tsp baking powder,1 1/2 tbsp cornstarch, sea salt, freshly ground pepper. Mix it up. In a hot pan add oil, and make a patty sized amount of potato mixture fry both sides. Place on a baking sheet and in the oven at 375 for 20 minutes.

Next with the same pan that you used to fry the potato, drain off any excess oil. On medium high heat add 1/2 small diced onion, 5-7 mushrooms sliced, 1 red pepper small diced, 1/2 cup crumbled tofu, 1/4 cup nutritional yeast, pinch of cumin powder, 1/2 tsp sea salt, and 1/4 cup water. Cook it down until all the water is absorbed.

The salsa is the easiest part...1 tomato cut into quarters, place it in a food processor, a handful of fresh cilantro, 1 clove garlic, and sea salt. Blend until desired consistency.

Layering potato, tofu, salsa, potato, tofu, salsa. For the top I cut up a little avocado.

2 bananas
1 avocado
1/4 cup cocoa powder
1 tbsp maple syrup
1/2 cup ice 
1 cup non-dairy milk
1tsp Acai powder

A Canadian company Earth Notions sent me a bunch of Organic Acai powder. I have never used Acai powder before so I had to do a little research on it.  I have read that it has health benefits, along with the essential fatty acids and is very high in antioxidants.There is only one ingredient  Organic Acai fruit, which is what you want when you are buying Acai products.With anything its important to eat a healthy diet and exercise regularly.

Avocado & Chocolate Tart


When I first saw this recipe on another blog  I did a little research and watched a video on you tube, I was like crazy avocado and chocolate. This I have to try...and today was the day! I know this is referred to as a raw dessert, but I don't think mine is, because I used cocoa powder. And that is processed.  I really like all the recipes that I have been seeing out there in the blogosphere on raw food. It inspires me. The only thing I wish I did different was I would of bought the right dates. I ended up having to push the chocolate mixture through a sieve, the dates were to hard (even though I soaked them for a half an hour). I still managed to get the sweetness out of them, I just didn't want all the little hard bits in it.

You must taste as you make it, adding a little bit of cocoa, maple syrup, water, etc... I like my chocolate not overly sweet. The crust is really interesting, and very tasty, It could be used with many different kinds of tart fillings. I got this recipe from my friend, An Opera Singer in the Kitchen.
We haven't eaten them yet...saving them for after dinner, but I did taste the filling and the crust....YUM!


Tortilla Soup


One of the most amazing tasting soups ever! I like mine mild, not to spicy, but you could always kick it up a notch with some extra chipotles.

I make my chipotles with dried ones that I soak, cook them with onion and garlic, spices and a blob of tomato paste, blend them up and store it in the freezer in small containers.

I have also switched from canned to dried beans, they are way more economical if you use beans as much as we do. I usually have a bowl of beans soaking in the fridge, even if I am not sure of what I am going to make. Always soak more then you need, freeze what you don't use, that way when you are in a jam you can always grab some from your freezer!

  • 2 tbsp veggie oil
  • 1 medium onion-small diced
  • 3 cloves garlic-minced
  • 1/2 cup corn kernels
  • 2 tsp ground cumin
  • 1 tbsp dried oregano
  • 1/2 can crushed tomatoes
  • 4 cups water
  • 1 cube veggie bullion
  • 1/2 red pepper-small diced
  • 2 tbsp ground chipotles
  • 1 cup pinto beans
  • 1/2 lime juiced
  • sea salt
  • freshly ground pepper
  • 1 cup fried tortillas- chopped into small pieces (about 2 tortillas)

  • 3 tortillas-folded in half cut into thin strips
  • 1/3 cup veggie oil

In a large pot heat oil, add onions and garlic. Saute for 3-4 minutes. Add corn and spices.
Add tomato, water, bullion. Simmer for 10 minutes. Add pepper, chipotle, beans.
Season with lime, salt and pepper. Add tortillas and simmer for 5 minutes

In a fry pan ( I like to use a cast iron) heat oil to medium high heat. Add tortillas. Using tongs flip around in pan until golden. Remove and sprinkle with salt.

Optional garnishes: Fresh cilantro, fresh parsley, & avocado (these are super tasty and highly recommended :)

avocado [ a-voh-KAH-doh ]


I thought it would be fun to do a bit of research on the avocado, since it is one of my favorite foods to eat, here is what I found  interesting and put together...


Avocados are native to Central and South America and have been cultivated in these regions since 8,000 B.C.  Avocados are the fruit from the Persea Americana, a tall evergreen tree that can grow up to 65 feet in height. That is a pretty big tree!

Avocados have a lot of good things in them like, vitamin K, dietary fiber, vitamin B6, vitamin C, folate and copper. They are a good source of potassium: higher in potassium than a medium banana!
Avocados are loaded with a variety of antioxidants, including familiar disease-fighting compounds such as lutein, beta-carotene, and vitamin E.


One cup of avocado provides almost a quarter of your recommended daily intake of folate, a vitamin which cuts the risk of birth defects. If you’re pregnant,or planning to be, you should eat them!

Avocados are a great choice food for babies, soft and easy to eat, plus avocados come in their own natural packaging, great for when you need to take it on the go.

Its funny that they are referred to as the "poor man's butter".
