Mama Mia it's vegan PIZZA!


For the last couple of days I have been craving PIZZA!! There is nothing better then ooy-goey cheezey pizza on homemade dough,  piping hot from the oven. It's hard to find the right fake cheeze to melt properly on pizza. Our grocery store is not very vegan friendly but it does carry a few things...one of them is this gourmet vegan cheese product. It's tasty and I feel that I got my pizza fix.

I have always love the Hawaiian style pizza, as a kid and now adult. Its by far superior to any other type of pizza. If you try and argue that...well I will meet you out at the bike racks after school. lol


I have packed almost all of my cookbooks.and I really love the Martha Stewart recipe for pizza dough, but since I couldn't remember it.

3 cups flour
1 cup warm water
1 tbsp cane sugar
1 tbsp quick rising yeast
2 tbsp olive oil

In a small bowl mix warm water and sugar together, sprinkle in yeast. Mix with a fork until combined.
Set aside for 5-10 minutes until foamy.
Pour into flour, add oil.
Mix together, form a ball. ( you might need to add a little more water, just to bring all the flour together)
Knead for 5 minutes. Place in large bowl with tea towel over top until doubles in size.

As you can see I made 2 pizzas with this dough recipe. One with pineapples, mushrooms, olives and fresh basil. The other has tomatoes, mushrooms, green peppers, and fresh green onions.

I know these pictures have nothing to do with pizza but....

I went out this afternoon to the local thrift store and found these neato scarfs...super floaty and whimsical. I think she liked them :)
We like to work the no pants in this house.hehe

Tofu Cheese



This afternoon I am making pizza for lunch. I really don't enjoy the vegan cheese you can buy at the store. Something about it, just doesn't  taste right, and its expensive.  I learned this recipe from the one of restaurant I worked at, it's really good especially if you sprinkle it lightly over the tomato sauce, then add the toppings.
I will post a picture of the pizza in a little bit, but the dough recipe is on my blog already.

  • 1/2 block firm tofu- grated
  • 1/4 cup nutritional yeast
  • 1/2 to 1 tsp garlic powder( depending on if you love garlic..like me)
  • 1/2 tsp dried basil
  • 1 tbsp olive oil
  • 1/2 lemon-juiced
  • 3/4 tsp sea salt
Grate tofu, place in a bowl, mix in the rest of the ingredients. I like to use my hands, try not to over mix it, otherwise it will lose the grated "cheese" look and be more like crumble.

Calzone








The dough we made for the calzones was terrific, turned out soft and fluffy, I probably would not use the vegan cheese again, but I would however add pineapple, and maybe some veggie bacon!
So I am going to post the dough recipe, which I found in the Martha Stewart living cookbook.

  • 1 cup warm water
  • 1/4 tsp sugar ( I used maple syrup)
  • 2 tsp active dry yeast
  • 2 3/4 - 3 1/4 cups flour
  • 1 tsp salt
  • 1 1/2 tbsp olive oil, plus more for the bowl

Pour the warm water into a small bowl. Add sugar and sprinkle in the yeast.
Using a fork, stir the mixture until the yeast is dissolved and water has turned tan.
Let the yeast stand until foamy, about 10 minutes.
In a mixer with dough attachment, combine flour and salt. Add the yeast mixture and oil.
Mix until dough comes together, adding more flour as needed until dough is smooth,
Transfer to a clean surface, knead four or five times, make into a ball.
Place the dough in a lightly oiled bowl, smooth side up.
Cover tightly with plastic wrap. Let the dough rise in a warm place until double in size.
About 40 minutes.
Remove plastic wrap and place your fist in the center of the dough to punch it down.
Fold dough back onto itself four of five times.
Cover with plastic wrap, and let rise again in a warm place until the dough has doubled in size,
about 30 minutes.
Cut into quarters, roll out on floured surface, into a circular shape.
add your toppings to one half of the dough, bring the other half over top and twist the edges together, bake in a 450 oven for 20-25 minutes
